I am so glad I found this recipe, and I could not have loved this recipe any less. It was so moist and yummy that I ate 5 of them in one sitting, and I did not even realize it!!!! Also, it is super easy to make.
Making warm Banana Blueberry muffins to welcome your day in the morning, and that ain’t bad…..
Banana Blueberry Muffins (make 18)
- 3 large ripe bananas
- 3/4 cup sugar
- 1 egg, beaten
- 1/3 cup melted butter
- 1 cup blueberries
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 + 1/2 cups all-purpose flour
Preheat oven to 375 ํF. Line a standard muffin tin with paper liners.
Whisk together flour, baking powder, baking soda, and salt in a bowl and mix thoroughly to combine. In a small food processor, puree the banana with sugar, butter and egg. (or mash it really well by hand – you want it pretty liquified).
Gently stir flour mixture and blueberries into banana mixture.
Spoon about 1/4 cup batter into each lined cup. Bake, rotating tin halfway through, until a cake tester inserted in centers comes out clean, about 18-20 minutes.
