This is a very easy recipe with very fews ingredients, so I highly recommend you use the best you can find. Wild mushrooms will work best for this recipe, but if you have a hard time finding them, any mushroom will do.
mozzarella mushroom with pancetta… Serve 2
- 1/2 cup (1 stick) butter
- 300g mushrooms, (I use shitaki and bunashimeji.)
- 1 cup fresh arugula
- 4 oz. pancetta, diced
- 250g mozzarella, torn
- Sea salt & pepper to taste
- Baguette, sliced & toasted
Preheat the oven to 420 ํF. Melt the butter in a large non-stick frying pan over high heat. Add the mushrooms, pancetta, salt & pepper to taste. Cook for 5 minutes. Be very careful NOT TO add too much salt. It can get too salty very easily. Add arugula, and cook for 1-2 minutes further.
Top with mozzarella and place in the oven for 5 minutes or until melted. Sprinkle chopped chives on top. Serve with baguette immediately.
