I hope this quote helps you in some way as Holiday Seasons always make some of us crazy busy 🙂 I hope you give yourself a 10-minute-Me-time everyday during this chaotic week, and I hope you finish your “to do list” on time.
This time of year, I would not dare giving you a complicated recipe. If you are at all like me, you probably want a recipe as easy as heating up a bowl of ramen cup noodle. Even though I feel the need to “decorate” my blog with Christmas recipes, I can only give you one. (Yes, I, too, have a long “To Do” list.) And this is, by far, the simplest, yet Christmasy-est recipe I have ever made. You can actually make it while gift wrapping, writing cards, and oh, planing a Christmas party 🙂

Christmas Bar
- 700g. milk chocolate, chopped
- 500g. white chocolate, chopped
- 2 + 1/2 tablespoons safflower seed oil OR vegetable oil
- 20g. unsweetened dried cranberries
- 40g. roasted & salted pepitas (pumpkin seeds)
- 50g. mini marshmallows
- a handful of peppermint
- a handful of snowflake (option)
Butter a square baking tin (8 x 8 in) and line it with baking paper. Set aside.
Place the milk chocolate and 1+1/2 tablespoons oil in a heatproof bowl over a pot of simmering water and stir until the chocolate is melted and smooth.
Mix cranberries, pepitas and marshmallows in the bowl. Pour the melted chocolate over the cranberries mixture and stir to combine. Pour the chocolate mixture into the prepared tin. Tap tap to have it spread evenly. Refrigerate for 20 minutes until it’s set.
While the milk chocolate mixture is in the refrigerator, in a different bowl, place the white chocolate and 1 tablespoon oil in a heatproof bowl over a pot of simmering water and stir until the chocolate is melted and smooth.
Pour the melted white chocolate on top and spread evenly with a knife. Sprinkle peppermint & snowflake on top, and refrigerate for 20 minutes further or until it’s set. Slice into bars. Makes 16.

I love this reminder to slow down and enjoy the chaotic season – it’s easy to get swept up in all the chaos. These bars look like the perfect no-fuss, but super festive holiday dessert. I especially love that photo of all the ingredients lined up in the bowl!
